2 limes, juice and zest
3 cloves garlic, finely chopped
2 cm (1 inch) piece of fresh ginger, grated
2 cups vegetable or fish stock
1 small onion, diced
1-2 red chilies, finely sliced (optional, for heat)
1 tbsp fish sauce
1 tbsp olive oil or coconut oil
Salt and pepper, to taste
